Adam Allinson is an award-winning chef, chocolatier and food demonstrator whose work explores the world of chocolate and desserts. Known for his engaging and entertaining presentation style, he brings energy, humour and storytelling to every talk and demonstration. He has appeared on the BBC, sharing his expertise in artisan chocolate and patisserie.
He is co-founder of The Canny Chocolate Company, where he creates artisan chocolates and patisserie using high-quality ingredients sourced from around the world. His work combines creativity with classical chocolate techniques developed through training in Belgium and France, two of the world’s most respected centres of chocolate craftsmanship.
Since founding the company in 2020, Adam has helped build a reputation for distinctive chocolates and imaginative flavour combinations, all handcrafted in small batches.
Inspired by global food cultures and the journey of cacao from bean to bar, Adam’s work focuses on combining refined flavour profiles with creativity and craftsmanship. His chocolates are designed not only to taste exceptional but also to tell the story of the ingredients, traditions and cultures that inspire them.
Alongside producing artisan chocolates, Adam is known for his engaging chocolate workshops and educational experiences. These award-winning workshops have introduced thousands of guests to the craft of chocolate making, and he regularly teaches chocolate and patisserie in schools, colleges, universities and professional institutions. Adam’s first book on chocolate is also due to be published later in 2026.
